In 1831, Texas and Mexico were at war. Texas wanted its independence to be its own country (which it eventually got in 1836). In the famous battle of Gonzales, the Mexican army had orders to seize the Texans' cannon. Texans gladly complied by raising a flag that said "Come and Take It" with an image of the very cannon. Since then, the the Come and Take It flag and cannon have been a symbol not only of Texas, but of the whole country.
